For the dry Seasoned Flour: * 300 g plain white flour * 3 tbsp corn flour * 2 tsp Garlic Powder * 2 tsp paprika * 2 tsp onion powder * 2 tsp dried thyme * 2 tsp black pepper * 2 tsp non chicken seasoning * 2 tsp old bay seasoning * 2 tsp celery salt
Gardein Ultimate Plant-based Chicken tenders were used.
Coat the tenders, vegan egg first then seasoned flour and fry until crisp and brown.
Waffles 1 1/2 cups unsweetened soy or coconut milk, or any vegan milk 2 teaspoons apple cider vinegar 2 cups all-purpose flour 1 tablespoon baking powder 1/2 teaspoon sea salt 1 tablespoon brown sugar 1/2 teaspoon vanilla extract Instructions
Mix the nut milk, vanilla extract and the lemon juice or ACV together in a small bowl and set aside for about 5 minutes - this will turn into vegan buttermilk. In a large bowl, sift the flour, baking powder and salt Add the sugar & buttermilk mixture into the dry ingredients and gently mix until combined. Preheat waffle maker. Using a ½ cup measuring cup, scoop out some batter and pour into the middle of the greased waffle maker. Remove waffle and serve with vegan butter, syrup, fruit as you wish!

• 3 cups Mock duck • 1/2 cup Shallot’s • 2 cup Potatoes (optional) • 1/2 cup Carrots • 1/2 Eggplant • 1/2 cup Coconut cream • 4 each Garlic Cloves, medium • 1/2 cup Fresh Tomatoes • 1/4 cup Curry Spice Blend • 6 sprigs Thyme,fresh • 4 Scallions • 1/3″ each Ginger • 1 Vegan Beef Bouillon Cubes • 5 fresh curry leaves • 2 splashes of Soya Sauce • 1/4 cup Water • Pink Himalayan Sea Salt • Black Pepper
1. Mix curry blend and 2 T canola oil into a paste. Add mock goat meat and mix gently until all goat* pieces are coated evenly.
2. Pan sear all of the mock pieces until golden brown, remove from pan and set aside.
3. Saute in Coconut oil shallots, garlic & ginger.
3. Add tomatoes, Soya Sauce, coconut cream, carrots, Eggplant, potatoes, garlic, thyme, scallions. Saute until for approximately 2-3 minutes or until the carrots and potatoes begin to brown.
4. Add bouillon and mock duck.
5. Simmer on low for 30 minutes so the eggplants get really soft and almost dissolve into the curry. Serve with hot steamy rice! -- It is ready to serve with roti
*Guinness punch* Mix this all together and serve on ice

*Seamoss Slammer! Pop it all in Shaker! 1 ounce Oat creamer 1 ounce Creme de cacao 1 ounce Brandy Nutmeg (pinch) 2 Tbsp Seamoss (Keymoss) Cocao Powder (for glass rim)
Saltfish Ingredients 1 can 14 oz/396g of Hearts of Palm 1 cup filtered water 1 tablespoon sea salt 2 teaspoons kelp Nori flakes optional
Saltfish Prep Take out each piece out of the brine, and cut them in half, then diagonally, and shred them slightly. This will give you that salt-fish look. In a mason jar add shredded heart of palms, a cup of water, tablespoon of salt and kelp flakes for that fishy taste. Pop the lid on and Set aside overnight!
Method 2 tbsp Mimi's Fish Seasoning (no fish actually in it) 1 Ackee canned/tin ackee* (454g) 3 Cloves of garlic finely diced 1 inch of piece of ginger finely diced 2 Roma tomatoes roughly chopped 1 medium sized bell pepper roughly chopped ½ red onion roughly chopped 3-4 stalks fresh thyme 3 stalks scallion sliced 4 Tbsp coconut milk 4 Tbsp tomato paste ¼ of Scotch bonnet or more for your preferred heat finely diced (optional) sea salt and ground black pepper to taste**
Let's cook!
* Drain off the salt brine, rinse well and pat dry. Ensure the heat is hot and add the Salt-fish to the pan along with fish Seasoning and black pepper. Fry until it becomes brown and crisp (set aside) * Heat a tablespoon of coconut oil in a pan. Add in the garlic, tomatoes, bell peppers, onions and cook down until it’s soft and the onions are translucent, for about 5-8 minutes. Add in the thyme and stir. * Add coconut milk, tomato paste and liquid from the ackee can, pop the lid on and simmer for 15 mins. * Stir in the salt fish, followed by the Ackee. Gently stir as it’s very delicate and you don’t want it to break apart. You’ll definitely want to re-season the dish with some more salt and top it all with a lot of black pepper. Pop the lid on and let it warm though on a low heat for 15 mins.
Jamaican Fried Dumplings Ingredients 1 cup of all purpose flour, sifted 1 1/2 teaspoon baking powder 1/2 Tablespoon unsalted vegan butter, room temperature Approximately 1/3 cup water
Instructions * Sift the flour, baking powder and salt in a medium bowl and whisk it all together. * Add butter to the dry ingredients and use your hands to spread it evenly. * Pour the water little by little and mix it all together, by using your hand to form a dough. * Leave the dough in the bowl and cover it with plastic wrap. Leave it covered for about an hour to rise. * Divide into six pieces and form dumplings * Deep fry them fry for about 6 to 8 minutes by rotating each side as it fries. I used a deep fryer to fry this recipe!

How To Cook A Jamaican Red Peas Soup With Vegan Soy Beef, Yams, Sweat Potatoes & Dumplings:
Ingredients • 2 cups dried red kidney beans 10 cups water • 1 medium Onion, chopped • 3 Cloves garlic, minced • 3 Green onions, chopped • 3 Sprigs of thyme • 2 medium carrots, peeled and chopped • Yam, Okra (optional) • 1 can coconut milk • 4 pimento berries • 2 cubes vegetable bouillons • 1 whole Scotch Bonnet • Vegan Soy beef (May wah) • Salt to taste • 2 tsp Oxtail Seasoning (vegan) • 1/2 tsp Paprika • 2 Tbsp Tomato Paste • 1/4 tsp Nutmeg • 1 cup all purpose flour
Dumplings • 1/2 cup of Fine Yellow Cornmeal
Directions: Soak beans in cold water overnight. The following day, discard water and rinse beans, place in a large saucepan with 10 cups of water and bring to boil, lower heat to simmer until tender for about 1 hour. Soak Vegan beef in hot water for 20 mins (until soft), then slice. Add all fresh ingredients, seasonings, vegetable bouillon, Coconut milk, Vegan beef & Scotch bonnet pepper. Bring to boil and reduce to a simmer and cook until vegetables are tender about 1 hour.
DUMPLINGS Place flour and cornmeal in a bowl. Add water and mix to make a stiff dough. Pinch off small pieces of dough and roll into the palm of hands to make long thin dumplings. Drop into soup and simmering for 20 mins. Discard Scotch bonnet pepper before serving!
