There are a bunch of Sans songs out there but for my money one of my favorites was "Stay" by TryHardNinja, it wasn't trying to be a super cool hard rock fight against skeleton man but its gentle acoustic treatment was one of the most warm and heartfelt songs about Undertale I've ever encountered!
