Our friend Charles Wong of Umamicue (Chicago based Asian bbq pop up) smoked some briskets on the last day of Windy City Smokeout '22 for this collaboration with Mike Satinover, aka, Ramen Lord. Mike lived in Tokyo and has devoted years to the craft of making noodles and ramen.They put the two together in this pop up at Perilla in Chicago.
