Sous Vide Pork Shoulder Chops: Juicy, Flavorful, and Steak-Like
Forget dry, bland loin chops! This transforms pork shoulder into chops with incredible flavor and texture. By cooking the shoulder sous vide at a low temperature for 16+ hours, the connective tissue melts into juicy gelatin, creating chops that rival steak with tender chew and rich taste.
Recipe
Ingredients:
• Pork shoulder
• Salt and seasonings (your choice)
• Oil or butter for finishing sear
Steps:
1. Season pork shoulder generously.
2. Vacuum-seal and cook sous vide at low temp for 16–24 hours.
3. Chill the cooked shoulder until firm.
4. Slice into thick “chops.”
5. Sear in a hot pan or on the grill for a caramelized crust.
6. Rest briefly and serve.
Key Tips
• Low-and-slow sous vide transforms shoulder into tender chops.
• Chilling before slicing ensures clean, steak-like cuts.
• Finish with a hard sear to add texture and deep flavor.
• Shoulder chops are richer and more forgiving than loin chops.
• Perfect for meal prep—cook, chill, slice, and sear when ready.

![How to Shape Dumplings, Easy to Advanced
Shaping dumplings is one of the main barriers to entry for home cooks, even though the process is as straightforward as can be: Dollop a little bit of filling onto a dumpling wrapper and seal it up, and you’ve got a dumpling. But there’s an entire universe of dumpling shapes out there, and while becoming comfortable with more advanced shaping techniques is mostly a matter of practice, you’ve got to start somewhere.
In this video, chef Tim Chin demonstrates in detail how to fold and pleat 12 different dumpling shapes, from super-basic ones that require no more than a couple of pleats and folds to trickier variations.
In the process, Tim highlights how the shape of a dumpling can determine the best method for cooking it. For example, cinching and pleating the dumpling wrapper many times around the filling will create a flat base, which is ideal for pan-frying, because the dumpling will have maximal surface area contact with a frying pan.
