On this video I smoke up 3 racks of St. Louis Style ribs on my UDS. I used the charcoal basket from my 22'' WSM for this cook and it worked very well and added a bit more distance between the heat and the meat. I did these racks for 3.5 - 1.5 - 5 meaning that I smoked them for 3.5 hours, then wrapped for 1.5 hours, and finished back on the grill with some Blue's Hog Original BBQ Sauce for another .5 hour. I used B and B Oak Briquettes and about 6 chunks of oak for the fuel. The rub I used is made by Burn Pit BBQ and is called Fire For Effect and it was awesome on these racks.
