Tuna casserole with wavy chips
PREP TIME: 15 min | COOK TIME: 50–55 min | SERVES: 6–8
Ingredients:
• 1 lb. pasta of choice (egg noodles, rigatoni or penne work best)
• 4 Tbsp. unsalted butter, plus 2 Tbsp. melted
• 1 white or yellow onion, roughly chopped
• 1 (12 oz.) bag frozen vegetables of choice (corn, green beans, carrots or a mix)
• 3–4 garlic cloves, minced
• 1 (10.5 oz.) can broccoli cheese soup
• Salt and freshly ground black pepper
• 1 tsp. crushed red pepper flakes
• 1 tsp. Italian seasoning
• 1 tsp. ground cumin
• 1–1½ cups shredded white cheddar cheese
• 1 (4.5 oz.) can premium tuna in oil or water
• ¼ cup grated Parmesan, divided
• ¼ cup wavy chips, crumbled
• Handful of fresh parsley, for garnish
• 3–4 green onions, sliced, for garnish
Directions:
1. Cook pasta in boiling water according to package directions. Drain and set aside.
2. In a large skillet over medium heat, melt 4 Tbsp. butter. Add onion, frozen vegetables and garlic, and cook for about 5 minutes.
3. Add broccoli cheese soup, salt, pepper, crushed red pepper flakes, Italian seasoning and cumin, and stir to combine.
4. Add white cheddar and tuna, and stir until cheese is fully melted and tuna is incorporated.
5. Transfer pasta to a large casserole dish, top with the cheesy tuna mixture and stir well to coat. Add more cheese on top if desired.
6. Bake at 350°F for 30 minutes.
7. In a small bowl, combine melted butter, Parmesan and crumbled chips.
8. Remove casserole from oven, spread chip topping evenly over the top and return to oven for 10 more minutes.
9. Let cool for a couple of minutes, then garnish with parsley and green onions before serving.
