Trying My Husbands Favorite Filipino Foods (Bacolod Food Tour)  @nicoleandmico

We are headed on a self-led Filipino food tour in Bacolod, Philippines so I can try Mico's favourite Filipino foods in his hometown! Bacolod City is regarded as one of the best places to eat in all of the Philippines, and they have some incredible iconic dishes and restaurants here. Bacolod City is most well known for being the creator of chicken inasal, which happens to be Mico's favourite food in the world! To get the highest quality chicken inasal, we went to Makbang Country, which translates to chicken country. Chicken inasal sounds simple - it's essentially BBQ chicken, BUT between the special marinade, the iconic chicken oil, and the dipping sauce that only Filipinos know how to make, chicken inasal becomes so much more than just BBQ chicken. Not to mention that the parts of the chicken you eat are...well... not what this Canadian-raised woman is used to. Mico wasn't going to let me get away without trying tinae (intestine) and atay (liver) in addition to the more-familiar paa (leg).

Something you may not know about Filipino food it that it is meat HEAVY. Like...really heavy! Filipino food is the most meat heavy cuisine we have ever come across, so of course, our second dish of the day was soup made with a massive beef bone. The dish is called cansi, and we went to Sharyn's Cansi House to try it (Sharyn's Cansi House is famous for the dish in Bacolod). The difference between this beef soup and others I've tried is the bone marrow... which Mico so kindly shows me how to eat Filipino-style.,

Batchoy was dish #3, and it was really surprising. It is filled with pancit noodles, which really excited me because pancit is my favourite Filipino food! As soon as I took my first bite of batchoy I was totally surprised. It was not at all what I expected, but I was happy to have a little less meat in my meal 😂

Our last dish may not have been classically Filipino, but it is very famous in Bacolod City and came highly recommended by many locals from Bacolod. It was a delicious dessert dish that we got from Calea, and it was the perfect way to cap off our Filipino food tour!
