This is how I work out complex music by ear. I'm not a musical prodigy, I don't have perfect pitch, I was not always able to do this, and yet, now I can do it! You can do it, too.
Before I started ear training consciously, I was truly terrible - I couldn't match pitches, figure out simple melodies, find chords, or really anything else. I didn't start ear training until many years into my musical journey but when I did, everything shifted. I know these methods work because I've seen massive changes in my ability, as well as in others.
