Instrument tracks are handy because of the ease of which you can bring up the channel settings window for audio processing. I find it is an easy way to get to the audio processing I need for that particular instrument. If you need to use rack instruments, it can take a little longer to find that audio/vst output of that particular instrument, consequently breaking up the workflow.
That said, using rack instruments may be essential, especially if you are using a VE pro slave computer. This is my solution to get the best of both worlds.
