Stage 2 starts throwing some curve balls at you, but nothing too major. Biggest is on occasion you will not be able to stay in vortexes at all times, and instead will start encountering fairies that you need to focus on blasting first. Only real thing to keep in mind is that in the second half of the stage you'll get caged in by two fairies. You can't actually kill those fairies, your zone of dodging is just a bit smaller.
Sayuri's a bit of a tricky one, but honestly if you consistently beat Reisen from last stage, you'll do fine here. Her attacks are mostly direct and more spread out than Reisen's dense attacks, however she really loves firing two conflicting waves you need to keep track of at once. So long as you can do that much however and make sure you focus on what you need to, you'll do fine against her.
