Tepsi or Tebsi is one of Iraq's most popular dishes that is a favourite all year round thanks to it's UMAMI and Tangy flavours. It's a casserole that is stacked with vegetables and ultra-juicy kofta, and together they produce some of the deepest flavours I've ever had. Even more so, I think it's perfect for winter when you want something with deep body and homey flavours.

As part of the campaign, the global community is invited to take part in #CookForPalestine by cooking, baking and sharing Palestinian-inspired dishes whilst raising funds for our friends at Choose Love's relief efforts in Gaza.
Choose Love is working with a number of local partners, and allocating funds based on the most immediate needs. They are currently working with Palestine Children’s Relief Fund, Medial Aid for Palestinians and Anera in Gaza to ensure the rapidly evolving needs on the ground are met in the most effective way.

50g Seedless Wet Tamarind + 150ml Hot Water
100g Tomato Passata
30g Tomato Paste
1 Tsp Vinegar
1 Tsp Pomegranate Molasses
1 Tsp Sugar
1 Tsp Salt
1/2 Tsp Black Pepper
1/4 Tsp Cayenne Pepper
250ml Water
Kofta:
500g Minced Lamb
1 Medium Onion
40g Fine Bread Crumbs
15g Parsley
1 Garlic Clove
1 Tsp Salt
3/4 Tsp Black Pepper
Veggies:
1-2 Slim Long Aubergines
2-3 Tomatoes
2-3 Medium Potatoes
2-3 Small Green Bell Peppers
2-3 Onions
1 Green Chilli (optional)
