Beryl Shereshewsky | This is the Palestinian Pancake You've Probably Never Had @BerylShereshewsky | Uploaded December 2023 | Updated October 2024, 3 hours ago.
Today, we are learning about a beautiful sweet common in not only Palestine but the whole Arab region. This is Qatayef, a sweet semolina panckaes stuffed with cream and topped with a sweet syrup and nuts. I was originally going to run this during Ramadan, but felt it was important to let Sabah talk about her dish now.
Note: I filmed this in Gaza with the help of a man named Yasser Abu Wazna before the war began. He is a storyteller on the ground there. Yasser and I were in touch until a few weeks ago and since then I have not been able to get messages through, I know power and wifi are difficult to come by so that may be a reason why, but I cannot confirm anything. With that being said I am also not sure about the safety of Sabah. I am thinking of them often and keep them close to my heart praying for their safety.
The recipe if you want to try making the dish is here: https://www.beryl.nyc/index.php/2023/12/27/qatayef/
