This video goes over how to interpret hearting curves. Also included is a brief overview of temperature, heat and energy.
As heat is added to a solid substance the temperature increases until the melting point is reached. At the melting point, the liquid turns from a solid to a liquid. The added heat is used to weaken the bonds between the particles and the temperature does not increase. Once all of the material is melted the temperature of the liquid will increase until the vaporization/boiling point is reached. Once again when there is a phase changes the heat will be used to turn the liquid into a gas and the temperature does not increase. When all of the liquid is turned into a gas the temperature again begins to increase with the added heat.
