Tropical Standard Falernum:
In Mortar and Pestle
Add
.25g Star Anise
.25g Mace
.33g Grated nutmeg
.5g Clove
Add to Beaker with
4.33g Lime Peel
9.33g Fresh Ginger
10ml Demerara 151 Rum
42ml Wray & Nephew Overproof
.2 ml Almond Extract
5ml Lemon Juice
17ml Lime Juice
88ml Cane Syrup
277ml Simple Syrup
Filter using your preferred method
Falernum #9:
In a pan
4g of Blanch Slivered Almonds
7 or .35g Whole Cloves
Toast lightly
Move to jar and add
5g Lime Zest
6g Fresh Ginger
60ml Wray & Nephew Overproof
Let mixture sit overnight
Filter using your preferred method
Add
167ml 3:2 Simple Syrup
15ml Lime Juice
.6ml Almond Extract
Bottle it up
Modern Tiki Style Falernum Essence:
Build in a Beaker
Add
1600 µl Lime Essential Oil
600 µl 30% Benzaldehyde
60 µl Clove Leaf Oil
150 µl Fresh Ginger Oil
80 µl Dried Ginger Oil
40 µl Coriander Oil
15 µl Nutmeg Oil
250 µl 1% Ethyl Vanillin
120 µl Rum Ether
120ml 95% Ethanol
Stir for a few minutes
Transfer to a small bottle
Traditional Barbadian Falernum Essence:
Build in a Beaker
Add
2.2 ml Lime Oil
900 µl 50% Benzaldehyde
300 µl Rum Ether
150 µl Valencene
25 µl Coriander
120 ml 95% Ethanol
Stir for a few minutes
Transfer to a small bottle
Ratio for Making the Essence into a Liqueur:
In a Graduated Cylinder
Add
175ml Barbados Rum
175g 3:2 Simple Syrup
145ml Water
5ml Essence
