The "Sunset over the Philippines". This cocktail, which uses an awesome Ube syrup, which is made by my very good friend Jessica, @SavidgeKitchen, is a great starter cocktail using this wonderful syrup!! Ube, which is a purple yam originally from the Philippines, offers a slightly sweet, pistachio and vanilla flavor. I used this syrup like an orgeat, and it came out perfectly!!! The cocktail is tropical, slightly tart, with hints of the Ube's pistachio. I have a couple of ideas floating around, and I'm super excited to use this syrup in some amazing cocktails!!

Ingredients include:
60 ml/2 oz Coconut Rum
15 ml/.5 oz Ube syrup
15 ml/.5 oz Lemon juice
15 ml/.5 oz Lime juice
Shake with ice for 10-12 seconds
Serve "up" in a chilled cocktail glass
Garnish with a dehydrated lime wheel
