NOTE: I didn’t do metric conversions for this recipe
Preheat oven to 400 Degrees F
Halve two medium zucchini, quarter the halves, and then slice into about 1 inch pieces. Cut 3 chicken breasts in half (you can use thighs as well) and season both sides to your liking with salt, black pepper, and smoked paprika. Bake at 400 degrees 20-25 minutes, checking until meat thermometer reads 165 Degrees.
Boil pasta of your choice (I used Farfalle) to your desired tenderness, rinse with cold water to stop cooking, and set aside. OPTIONAL: Reserve 1/4 cup of pasta water to make the sauce creamier later.
For the sauce pour 28 ounces of crushed tomatoes, and 14 ounces of diced tomatoes, into a medium sauce pot. I used cans for this step. Stir in the zucchini as well. Stir in a generous teaspoon of Italian blend seasoning, and then bring sauce to a boil. Once boiling add 1/4 cup red wine blend, or any red wine of your choice. You can also use red wine vinegar if you prefer, or use white wine if you want a sweeter sauce. Reduce heat, add 1 Cup of creamer, and simmer for about 10-15 minutes.
Finally, plate your pasta and chicken, and cover both generously with the sauce. Bon appetit!
