Sometimes as a GM in a game like Pathfinder or D&D, especially when you're improvising, things go in a direction far different from what you expected. And when that happens, setting up the exact combat encounter you need can be one of the most daunting challenges: How can you make an encounter quickly with an appropriate challenge and the creature or creatures that should logically be there based on your improvisation? Usually only game designers or extremely skilled rules improvisors can just flat out build new monsters on the fly in the middle of the game without taking a pause, so that's likely not an option available to you, especially if you need several different monsters.
