What angle should you sharpen your knife to?

Start by matching the factory angle and use the Sharpie trick to see exactly where you're hitting.

If you’re removing marker at the edge, adjust.
If you’re hitting the shoulder, adjust.

And remember... changing angles changes the amount of work.

More obtuse = easier
More acute = more material to remove
