In this episode, we talk with Brian about starting out cooking ribs and chicken on the side of the road for friends and family, opening his first restaurant in 2017, and why he eventually shut one location down seasonally just to get back on the road with the mobile units. We get into the regional BBQ differences he's noticed traveling through South Carolina, Augusta, and Georgia (ribs versus brisket versus vinegar-based pulled pork), the 16-hour brisket process that starts at 3am, and the story behind his jerk ribs — a recipe his Dominican wife rebuilt from scratch after telling him his original jerk sauce wasn't the real thing. We also get into the name "Smokers Delight" (a nod to Rapper's Delight) and his hard-earned advice on the single biggest hurdle in the food business: staying consistent, and why narrowing your menu down to your five best dishes beats running 40 mediocre ones.
