TL;DR:
Hue: ratio of each RGB channel.
2 color channels when saturation is 1
3 color channels when saturation is not 1

Saturation: the movement of RGB channels toward/from (desat/resat) the biggest value of any channel

Value: keeping the ratio of each color channel the same when expanding/shrinking (brighten/darken)
