There are a ton of builds you can make in Enshrouded since they give you lots of different weapons, armor, gems, rings, and skills to choose from. This is what I think is the best build to make you virtually unkillable and also deal a ton of damage with two handed weapons and greatswords.

Update 8 added a ton of changes like heavy attacks, new skill tree reworks and other gameplay things to make this build ready for Enshrouded 1.0
