This farm relies on a few bugs to work. This should make the farm 1.21.2+. It currently works up to 1.21.5. I can now confirm it will be patched after 1.21.5. It only works starting in 1.21.2 and stops working after 1.21.5. here are the specs:

50k crimson stems/h or
44k warped stems + 3k+ bonemeal /h
14k shroomlights/h with 2 hoppers. You could collect a little more with more filters

3.6 MSPT with lithium on my i7-13620h
