The Jungle Bird, but swap the pineapple for apple and pear
InariForges and I met under some intriguing circumstances. I put out some feelers on social media about how to use a few of the exotic ingredients specified by donors for our recent Mixing Drinks and Changing Lives charity stream. Among the people who offered ideas for what to do with chicken gizzards and frog legs was Inari, who later popped into the livestream still furious that I’d cursed their brain with those prompts, all in the name of charity.
Inari is a kind soul, because instead of ordering something chaotic as recompense, they opted for a simple Jungle Bird with the pineapple juice swapped out for some pear and apple concentrate I had left over from a previous event.
Lemme tell ya, if you haven’t tasted that characteristic charred Hamilton Pot Still funk alongside the bright tartness of apple juice, you’re missing out. This one leans less tropical pineapple and much more cinnamon-spiced candy apple, with the pear filling things out in the background.

▷ 1.5 oz (45 ml) Dark Rum (Hamilton Jamaican Pot Still Black) @rhumguy
▷ 1.5 oz (45 ml) D'Anjou Pear + Apple Juice Concentrate
▷ 0.75 oz (22.5 ml) Campari @EnjoyCampari
▷ 0.5 oz (15 ml) Lime Juice
▷ 0.5 oz (15 ml) Orgeat (Liquid Alchemist)
Method: Shake & strain over a large cube
Garnish: Pineapple Fronds
