As many of you know my hubby built me a garden last summer during our Quarentine...which was then dubbed the Garden Of Eatin! Last year it provided more than I could keep up with... this year was a different. story! This short video is a recap of the highs and lows of my garden starting in May and ending in September. I'd love to hear how it went for you this year!

Golden Tomato Sauce
(Made With Golden Boy Tomatoes)
8-10 Medium to Large Tomatoes (must be yellow or golden tomato varieties)
2 Tablespoons Olive Oil
2-4 Cloves of Garlic
2 Small Shallots
1 Shake of Hot Red Pepper Flakes
1 Teaspoon Fresh Thyme (or more to taste)
1/2 Teaspoon Coarse Salt
1/4 Teaspoon Black Pepper
1/4 Cup Fresh Parmesan Cheese
1/4 cup Of Thinly Slice Lemon Basil ( or Basil of your choice)
1. Blanch the tomatoes. (put an x on the bottom of the tomato and core the top for easy skin removal). Boil in hot water until the skin breaks away, cool under cold water or let them cool on the counter, remove skins and squeeze out majority of seeds. * NOTE* You can do this step ahead of time and keep in the fridge for a day or two.
2. In a saucepan add olive oil & saute' garlic, shallots and red pepper flakes on medium for 1 minute -or until fragrant.
3. Add tomatoes, Salt/Pepper. Heat on medium until it bubbles and simmers.
4. Reduce to low, add 1/2 the basil, the thyme and the parmesan cheese. Simmer covered for 30 minutes OR if the tomatoes are too watery, simmer uncovered and cook down.
5.Take an immersible blender and blend until semi-smooth or to your preference of texture.
If the sauce is too watery, cook off liquid until desired thickness is achieved.
Plate a bowl of your favorite pasta, spoon sauce on top and then garnish with the remaining basil and some parmesan cheese.
**** NOTE*****
The addition of some crispy bacon or pancetta adds a nice salty finish to this somewhat sweet and light sauce.
