Smothered Fish
4 catfish filets
seasoning of choice
4 Tbls olive oil
4 Tbls butter
2 onions sliced
2 green bell peppers sliced
2 cups sour cream
3/4 cup bread crumbs
seasonings
parmesean cheese
fried/saute fillets in oil and butter
remove from pan with brown and done
cook onions and peppers on remaining oil in pan. when soft turn off the heat and mix in the sour cream. add fillets and cover with sour cream, onion and pepper mixture. Top with the bread crumbs you have seasoned and added the parmesean cheese to. place in a 375° oven for about 15 minutes
