These lemon cookies are absolutely delicious. They are sweet from the sugar on the outside and tart and tangy on the inside. If you love lemon desserts you need to try these!
Lemon Cookie Recipe
2 cups all-purpose flour
1 teaspoon baking soda
¼ teaspoon salt
½ cup butter, softened
1 cup granulated sugar (Plus some for dipping cookie balls in)
1 tablespoon lemon zest
3 tablespoons lemon juice, freshly squeezed
1 teaspoon lemon extract
½ teaspoon vanilla extract
1 large egg
1. In a large bowl using an electric mixer, beat together butter, sugar, and lemon zest on medium speed until light and fluffy. Add lemon juice, lemon extract, and vanilla extract; mix until just combined.
2. Scrape down the sides of the bowl, add egg; mix until just combined.
3. Add flour, baking soda, and salt; mix just until combined.
4. Cover cookie dough with plastic wrap and refrigerate for 2-4 hours, or overnight.
5. Preheat oven to 350F degrees.
6. Roll chilled dough into tablespoon sized balls. Then roll balls of dough in sugar. Place on an ungreased baking sheet or silicone mat/parchment paper lined baking sheet.
7. Bake 10-14 minutes, until they are slightly golden around the edges. Cookies may appear to be soft and undone, but they will set as they cool.
8. Transfer them onto foil, wax paper, or a cooling rack and let them cool for a few minutes before eating.
