Once you have your specialty beans, it is time to dial-in for the optimal espresso extraction. Dialing-in simply means adjusting the ‘grind dial’ to change the size of grind. Depending on whether your espresso is dispensing too fast or too slow will determine whether you need to make your grind size finer (decrease) or coarser (increase).
