Actually, plasmas are really the first state of matter. Right after the Big Bang event 13.8 billion years ago, everything was in the plasma state. It took hundreds of thousands of years for things to cool down, for the plasma to turn back into a gas. But in terms of their study and use in practical terms, that is much more recent.
