Today I am sharing a super quick and simple Thai inspired, chicken noodles soup. This is my go to when I'm not feeling well as it seems to always hit the spot and start me feeling better!!!

INGREDIENTS:
Drizzle oil for pan
3 cloves garlic
Nub ginger
1 red chilli or a small sachet
2tbsp honey
1tbsp fish sauce
2tbsp soy sauce
1 litre chicken stock
1 tin coconut milk
3 kaffir lime leaves
1 stalk lemongrass
3 diced chicken breatsts
Shitake mushrooms
Pak choi
Spring onions
