My favourite style of pork rib. These are super simple to make and you can do anything you want with them - add garlic, paprika etc for extra flavour. But stick to the heavy coarse black pepper for an authentic Texas style rib. I failed to mention I used white English oak throughout this cook.
The timings;
- 3.5 hours unwrapped getting lots of smoke at 275f/135c. I spritzed every hour or so, or when they dried out completely.
- 1hr 45m wrapped in foil. Drizzled with bbq sauce/apple cider vinegar and water mix.
- rest 20-30 minutes meat side up and exposed to the air.
At the end of the video a lot of smoke came out of the chamber. This is not the kind of smoke you want throughout the cook. Before opening the smoker, I shut down the chimney and closed all the intakes to stop the fire - this created a lot of smouldering dirty smoke but did extinguish the fire. Look for clean smoke throughout your cook with a lot of airflow.
