I found a low-carb tempura batter mix that I’d like to try on some fish and shrimp. So, yesterday, despite thin ice, I went ice fishing, ah, but from the safety of the dock. Let’s see how it goes. Click SHOW MORE for info on the equipment, fish, lake, and recipes.

THE LIVE BAIT: mealworms fixed to a 1/64 oz. generic panfish ice-fishing lure.
THE ROD: is a Fenwick, EliteTECH Ice, ETI23UL, 23”, Ultra Light (2-4 lb. line).
THE REEL: A Frabill model P-10 Sub Zero Ultra Light has been discontinued.
THE LINE: Trilene Micro Ice 4 LB test monofilament in solar green color.
THE LAKE is called Lake Ketchabigwon (named by native Americans). It is almost 6 acres and is located in NE Ohio. It is 12’ at it’s deepest. It sits on 37 acres of property. The lake is private.
FISH IN THE LAKE are largemouth bass, bluegill, white crappie, black crappie, yellow perch, channel catfish, and grass carp

The main camera is my iPhone X on a large tripod. I also use an iPhone 6s Plus as a close-up, counter-top camera when cooking mounted on a small tripod. I use a Rhode microphone indoors to help lessen the echo. The video is edited on my MacBook Pro using Final Cut Pro X.

SRIRACH DIPPING SAUCE
6 TBS of mayonnaise
2 TBS of Sriracha sauce
juice of ½ lemon
¼ teaspoon Kosher salt to taste
Mix the above ingredients in a small bowl
TEMPURA SHRIMP, FISH AND VEGETABLES
INGREDIENTS (enough for 50 pieces):
1 LB of raw shrimp, peeled and cleaned
6 ounces of fillet from small fish cut into 6” inch strips
One bell pepper cut into strips
One zucchini cut in half, then into strips
Onion rings from one sweet onion
⅔ Cup plus ¼ cup of ice cold water (7⅓ ounces)
2 Eggs, beaten
1¼ Cups of LC Foods Tempura Batter (available at netrition.com)
Vegetable oil for frying in cast iron skillet
DIRECTIONS:
In a medium bowl place ice cold water and beaten eggs and mix.
Add Tempura Batter Mix and whisk together.
Refrigerate batter for 10 minutes. For additional flavor add garlic powder, parsley or paprika to your taste.
Dry all pieces of food with paper towels before frying.
Use a heavy pan (like cast iron) if possible. Add 1" of canola, corn, sunflower or peanut oil. Heat oil to 360°F. Oil is the perfect temperature when a batter droplet goes to the bottom and then shoots up to the surface floating to sizzle. Overheated oil will brown too quickly. Low-heated oil will cause soggy/greasy tempura.
Add some shrimp or vegetables to the hot oil. Do not fry too many pieces at a time. Flip pieces only once and fry until golden brown, about 1½ minutes per side.
Don't stack pieces on top of each other when draining. Serve hot for maximum crispiness.
