Today, we are baking a simple tea time special, Malaysian butter cake! My grandmother has been following this recipe since the 1950s, and this is a Deepavali staple snack. Back in the day, cakes needed to last longer because they were made in large quantities for the celebrations. Without fridges to store the cakes, recipes would double the normal flour amount to make crumbly cakes with less moisture, hence allowing them to last longer without refrigeration.
