Unlike American pancakes, Ukrainian Syrnyky are made with cottage cheese — not just flour, eggs and milk — because fresh cottage cheese was once a staple in every Ukrainian village. That’s how they became a defining part of the country’s breakfast culture and culinary identity. Ukrainian chef Yevhen Klopotenko believes that syrnyky have the potential to conquer the world due to their uniqueness and authenticity.

RECIPE
🧾 Ingredients

300–350 g Cottage cheese (8–9% fat)

1 egg

1–2 tbsp sugar

A pinch of salt

10 g vanilla sugar

3 tbsp flour

1 tbsp additional flour (for coating)

3–4 tbsp oil (for frying)

100 g sour cream for serving or condensed milk

1.** Press the cottage cheese through a sieve. In a bowl, combine the cheese with the egg, sugar, vanilla sugar, and a pinch of salt. Mix well.

2.** Add the flour and mix until combined.

3.** Lightly flour a work surface. Take about **50–60 g** of the cheese mixture and shape into round syrnyky about 4 cm in diameter and 2–3 cm thick.

4.Coat each piece in flour. You can also use a glass to help shape them evenly.

5. Fry in a pan with oil over medium heat for **2–3 minutes on each side** until golden. If needed, finish cooking in the oven for **7–10 minutes at 180°C (356°F)**.

6. Transfer the finished syrnyky to a plate and serve with sour cream.

👉 For a savory option, serve the syrnyky with salmon.
