🇨🇭🥔 Switzerland are through to the World Cup quarter-finals!

Today I’m making Rösti – a humble potato dish that perfectly represents Switzerland. While the country is famous for fondue and raclette, Rösti is the one dish that unites every region. Simple, reliable and packed with character… just like this Swiss team. 🇨🇭⚽

Recipe (Serves 4):

🥔 1kg starchy potatoes (boiled in their skins the day before, then chilled)
🧈 60g unsalted butter
🧂 1 tsp fine salt
⚫ Freshly ground black pepper

Peel and coarsely grate the cold potatoes. Season with the salt and pepper. Melt half the butter in a 24–26cm frying pan over a medium heat, then add the potatoes, gently pressing them into an even round. Cook for 10–12 minutes until deeply golden underneath. Carefully flip using a plate, add the remaining butter and cook for another 8–10 minutes until crisp and golden on both sides. Slice into wedges and serve immediately.
