You can change the levels in Mario Maker 2 between day and night mode with the Angry Sun item. This item is available in the Super Mario Bros, Super Mario Bros. 3, Super Mario Land, and Super Mario Bros. U game styles. It is not available in Super Mario 3D World. Once you've placed the Angry Sun on your level you will change it from the sun to the moon and doing so will make the level a night level.
