SUNDAY DINNER AT OUR HOUSE: A Greek-inspired Roast Dinner
I imagined a sunny weekend when I thought of this, as it happened it’s rained most of the day, but the sun did come out at the end.
🍗 I just rubbed the chicken in a mix of garlic oily, @capeherbandspice_uk Greek Style Lemon & Herb Seasoning (I like this one and I’ve bought it a few times now) and paprika, with plenty of salt and pepper. I just roasted as normal and made sure to baste several times and let it rest for a good half hour afterwards.
🍋 The potatoes were peeled, cut into thick wedges and then oven roasted in a mixture of stock (500ml), the juice of three lemons and about 50ml of garlic oil. I turned them a few times and finished them under the grill when most of the cooking liquid had gone, for a bit of extra colour.
🫒 Then we had a Greek Salad, some whipped feta with roasted tomatoes and some pitta. It was good! And I’ve earned myself a rest and the removal of my bra now! Woo!
