Autumn is here and my appetite for Stuffed Pumpkins has peaked! I have prepared Stuffed Pumpkins in the woods for the past 30 years. It's just not Fall without preparing, cooking, and eating Stuffed Pumpkins in the woods.
It's an ideal recipe if you plan on being in camp for the day. The end result is an absolute feast that everyone you're camping with will love and remember for years! I actually invented this based on ingredients that would have been available in the 18th century. Here is the list of ingredients I used.
2 Small to Medium Pie Pumpkins
Uncle Ben's Long Grain and Wild Rice (Original Recipe)
1/4 Lb. Diced Smoked Bacon
1 Lb Sage Sausage
Unsalted Chicken Broth (instead of water for the rice)
2/3 Cup Dried Cranberries
1 Large Granny Smith Apple Diced With Peel On
You'll need a kettle to prepare the rice and meat mixture and the tools necessary to open and hollow out your pumpkins. Pretty simple for such an amazing meal. It should serve 4 hungry to 8 not-so-hungry campers.
