Day 2 of 14 Days of Love Behind the Recipes is all about steak bites and gnocchi! It’s one of those happy little surprises that started in a tiny RV kitchen. Back in 2018, we took a 10-day RV trip through New Mexico, and I had just a saucepan, a skillet, and a whole lot of hungry mouths to feed. I got hooked on experimenting with recipes that were low-mess, low-effort, and high-reward. That’s how this one was born. My kids loved it so much they kept asking for it even after the trip. I almost didn’t publish it because no one else was really making anything like it, but I added it to my family favorites cookbook anyway and it’s been one of the most popular recipes on my site ever since.
