Dahi Baingan: Sautéed Eggplant with Yogurt 🍆🥣

Whisk yogurt, besan, and cilantro together; set aside. Heat oil in a pan on medium-high. Add cumin seeds, asafetida, and ginger; stir for 30 seconds. Add eggplant, spread evenly, sprinkle with salt, and cover. Cook on medium-low for 2-3 minutes, then turn over and cook for another 2-3 minutes until soft. Add coriander, fennel seeds, and turmeric; stir gently. Add yogurt, stir, and cook for 2-3 minutes.
