BANANA PUDDING CAKE Different way to use ripe bananas my mom life 2023-02-05 | This Banana Pudding Cake is so yummy. I am always looking for different ways to use up those leftover too-ripe bananas and this recipe is perfect for that. I hope you try it!! INGREDIENTSCake1 box Yellow Cake Mix 2 Ripe Bananas 1 small box (3.4oz) Banana or Vanilla Flavored Instant Pudding Mix 3 large Eggs 1/2 cup Vegetable Oil 1 cup WaterFilling1 box (3.4oz) Banana Flavored Instant Pudding Mix 1/2 cups Milk 1 can Sweetened Condensed Milk Frosting2 sticks Butter16 ou. Powdered Sugar 1 teaspoon Vanilla ExtractHeavy Cream or Milk Vanilla Wafers InstructionsPreheat your oven to 350 degrees F.Cut some parchment paper into circles that can fit at the bottom of your 8 inch cake pans. Spray cake pans with non-stick cooking spray and lay the parchment circles inside. Spray again with cooking spray and set aside.In a large mixing bowl blend the bananas with an electric mixer until creamy.Add in the water, eggs, and oil and mix until well combined. Add in the cake mix and pudding mix. Mix again and beat for two minutes. Divide the batter between your prepared cake pans.Bake in the oven at 350 degrees F according to your box instructions. Once the cakes have finished baking allow them to cool. I like to place mine in the freezer to get super cold before assembling. Prepare the frostingIn the bowl of a stand mixer place your two sticks of butter. Beat for two minutes, until butter is light in color. Add your powdered sugar and beat again for an additional two minutes. Add vanilla and a splash of milk or cream to thin out. Prepare FillingMix the pudding with the milk. Once combined add in the sweetened condensed milk. Crush half a bag of vanilla wafers. AssemblyPlace one cake layer down on your cake stand. Make a rim of buttercream and then place half to three quarters of the pudding mixture in the middle. Spread out evenly. This will be a thick layer. Place the second cake layer down and frost the cake with the rest of your buttercream. (I leave a little to the side for decorating). Take the crushed vanilla wafers and push into the sides of the cake. Once the cake is frosted and the cookie crumbs are all around the sides of the cake, pipe a border along the top. Sprinkle cookies along this border. Fill the center with the reaming pudding mixture and spread out evenly. Chill cake for at least an hour for everything to set. COPYCAT HOTPOCKETS in the AIR FRYER my mom life 2023-02-03 | These homemade HOTPOCKETS are so yummy. They could not be easier to make. You can fill them with whatever you like. I chose to do a ham and cheese, and pepperoni and cheese this time. What you need: Pizza doughFillings of your choice Melted ButterGarlic PowderItalian Seasoning Preheat the air fryer to 400°F. Roll out the pizza dough and cut into rectangles. Roll them pretty thin and top one side with fillings. Place the top piece on and seal the sides very well. Making a Birthday Cake | Everlees 4th Birthday Cake my mom life 2023-01-30 | #recipe #birthday #birthdaycake I made this cake for my daughter Everlee's 4th Birthday. She wanted a butterfly cake and her favorite colors are pink and purple. To make this cake I doctored up a boxed cake mix. Every time I use a box I add a package of pudding mix to it. It keeps the cake super moist. After that you just follow the box directions and it will turn out perfect every time. For my buttercream I follow the ratio 4 sticks of butter to 32 oz. of powdered sugar. If you are making a 13X9 you can probably get away with cutting that in half and doing two sticks of butter and half a bag, or 16 oz. of powdered sugar. 30 MINUTE AIR FRYER MEAL my mom life 2023-01-10 | #airfryer #recipe #dinner This is so easy to make and is a go to meal for us. I use to make it in the oven but have switched to doing it in the air fryer. You can easily add onions and peppers if you want. I keep it simple and just do sausage and potatoes. SausagePotatoesOil Season Salt Preheat air fryer to 400°. Cut potatoes in to bite sized pieces. Coat with one tablespoon of oil and season with seasoning of choice. Place in hot air fryer and cook for 15 minutes. After 15 minutes toss and cook for an additional 5 minutes before adding in cut up sausage. Cook for 10 more minutes or until done to your liking. Homemade Chocolate Sandwich Cookie Recipe my mom life 2023-01-08 | These cookies have almost a brownie like consistency and are filled with a delicious vanilla buttercream. 1 3/4 cup all-purpose flour3/4 cup unsweetened cocoa2 teaspoon baking soda1/2 teaspoon baking powder1/2 teaspoon salt1 cup granulated sugar1/2 cup vegetable oil2 large eggs 1/4 cup milk, or buttermilk1 stick butter, room temperature4 - 4 1/2 cups powdered sugar1/4 cup milkFor the cookies, preheat the oven to 350° and line two cookie sheets with parchment paper. In a medium bowl, whisk together flour, cocoa, baking soda, baking powder, and salt. In a large mixing bowl, beat together sugar, oil, eggs, and milk. Gradually add dry ingredients and beat after each addition until well combined.Scoop the dough with a 2-tablespoon cookie scoop and place them on the prepared baking sheets.Bake for 8-12 minutes. Allow them to cool completely before filling.To make the buttercream cream butter until smooth and creamy, 2 to 3 minutes. With mixer on low speed, add 2 cups powdered sugar and mix. Once combined add in half of the milk and mix. Repeat with the rest of the powdered sugar and then the milk again. How to Make BUCKEYES my mom life 2023-01-05 | #buckeyes #homemade #recipe This recipe could not be easier and is a family favorite. I make these all throughout the year, but especially at the Holidays. I wanted to have this video up before Christmas but that just did not happen. I ended up making a batch for my father in law and decided to film it for you all. Buckeyes Recipe1 cup butter, melted1 jar (15-18 ounce jar) smooth peanut butter4 - 5 cups powdered sugar1 1/2 cups semi-sweet chocolate chips1-2 tsp. coconut oil1. Melt the butter and mix in the peanut butter until it is smooth. 2. Once smooth, add 2 cups of the powdered sugar. Mix. Add in the other 2 cups of powdered sugar and mix well. If needed use a hand or stand mixer.3. Use a cookie scoop or a spoon and scoop out a couple tablespoons of the peanut butter mixture. Roll into a ball and place on a parchment paper lined cookie sheet. Continue until all of the peanut butter mixture is used. Freeze the tray of peanut butter balls for at least an hour. 4. Once the peanut butter balls are frozen, melt the chocolate, in 30 second intervals, in the microwave. Add coconut oil and mix. 5. Use a tooth pick or corn on the cob holder, and dip each peanut butter ball into chocolate, leaving some of the top without chocolate. AIR FRYER GARLIC KNOTS super easy my mom life 2023-01-01 | These Garlic Knots are super easy to make and use just a few ingredients. I made them in the air fryer but you could do it in the oven just as easily. IngredientsPizza Dough1 tsp. minced garlic1 tsp. dried parsley1 Tbsp. Grated Parmesan4 Tbsp. melted ButterPreheat air fryer to 350°F. Open pizza dough and pinch off even sections. Roll in between hands and stretch out long enough to tie into a knot. I ended up with 10 rolls from one tube of Great Value pizza dough. Once you have all of your rolls ready, place half of them in the preheated air fryer. Cook for 5-7 minutes. While the rolls are cooking combine melted butter, parmesan cheese, garlic, and parsley. When the first batch is done cooking, remove from the air fryer and add your second batch. This is an awesome gift to give to friends and families. I actually took some over to my neighbors as soon as I was done filming! I hope you try it!! The chocolate is such a classic and the peanut butter is a crowd pleaser for sure! Peanut Butter Fudge1 1/2 cups creamy peanut butter 1/2 c milk2 cups sugar7 oz. marshmallow fluffLine an 8X8 pan with parchment paper or foil. Lightly spray and set aside.In a saucepan over medium to low heat, combine milk and sugar. Stirring constantly, bring it up to a boil. Let boil for 3 minutes 9 (CONTINUE STIRRING) and then remove it from the heat. Add the marshmallow fluff and peanut butter. Stir until everything is melted together and smooth. Pour into dish and let cool. Once it is room temp you can pop it in the fridge to set up faster. Cut into squares and enjoy! Chocolate Fudge3 cups semi-sweet chocolate chips 4 tbsp. butter14 oz. can sweetened condensed milkLine an 8X8 pan with parchment paper or foil. Lightly spray and set aside. In a saucepan over medium to low heat, melt the chocolate chips, sweetened condensed milk, and butter together. Stir constantly until everything is fully melted and it becomes silky smooth. DO NOT overheat or walk away from the stove. Pour into dish and let cool. Once it is room temp you can pop it in the fridge to set up faster. Cut into squares and enjoy! Cranberry Sauce Recipe½ cup water½ cup orange juice1 cup granulated sugar or sugar replacement of choice12 ounces fresh or frozen cranberries2 teaspoons orange zest1 cinnamon stick, or 1 tsp. ground cinnamon⅛ teaspoon ground clovesCombine sugar, water, and juice in a pot. Bring mixture to a boil.Add cranberries, orange zest, cinnamon stick, and cloves. Heat over medium until the sauce returns to a boil.Reduce heat to medium-low and simmer for about 20 minutes or until the sauce thickens. Remove from heat and cool cranberry sauce. I had to pair down our Thanksgiving menu this year due to price increases as well as just trying to be smarter with our money a little bit. I LOVE cooking and baking this time of year and it hurts my heart a little bit to not be making the full Thanksgiving spread but honestly, it just won't get eaten. It is just our kids and my husband and I this year and the kids just are not crazy about all of the thanksgiving dishes yet. I am sure that will come as they get older. Hot COCOA COOKIES Christmas Cookies my mom life 2022-11-17 | #christmascookies #hotcocoa #hotchocolate These hot cocoa cookies are so fun and really yummy! Hot Cocoa Cookies 1 cup butter, softened1 cup sugar2/3 cup brown sugar2 large eggs1 teaspoon vanilla3 1/4 cups all purpose flour4 packages hot cocoa mix or 3/4 cups hot cocoa mix 1 teaspoon salt1 teaspoon baking soda2 teaspoon baking powder1 cup chocolate chips1/2 cup white chocolate chips1 cup Mallow Bits, mini dehydrated marshmallows Beat butter and sugars until creamy. Add eggs and vanilla and mix well.Add flour, baking soda, baking powder, and salt to butter, sugar mixture. Stir in chocolate chips, white chocolate chips, and mini marshmallows. Cover and chill dough for at least an hour. Preheat oven to 350°F. Scoop out dough and place onto parchment lined cookie sheets. Leave room for the cookies to spread.
