Southern Tea Cakes
-1/2 cup unsalted butter
-3/4 cup sugar
-1 egg, room temp
-1 tsp vanilla
-2 cups all purpose flour
-pinch of ground cinnamon or nutmeg
-3/4 tsp salt
-3/4 tsp baking powder
1: In a medium bowl, cream butter and sugar.
2: Stir in egg and vanilla.
3: Stir in salt and baking powder.
4: Stir in nutmeg or cinnamon.
5: Stir in 1 cup flour.
6: Stir in remaining cup of flour.
7: Flour your surface, and roll dough to 1/4 to 1/2 inch thick.
8: Cut out tea cakes using a 2-inch cookie cutter.
9: Bake at 350° for roughly 10 minutes, until lightly golden around edges.
10: You can sprinkle the cookies with granulated sugar immediately after removing them from the oven, or serve them as is. Either way is fine.
