This is how you can use your stale bread to make super delicious sourdough spinach dumplings. In Germany they are known as "Spinatknödel".

I first started to love them when I went to Alto Adige (South Tyrol) and figured I'd share you one of my favourite recipes with step by step instructions.

You can take any bread from a couple of days ago. It is an excellent way to use your bread. I provided the recipe with % values calculated based on the bread that you have available. That way you can scale up and down depending on how much bread you have available.
