Recipe (only loosely followed)
600 g white flour
200 g whole wheat flour
200 g spelt flour
770 g water
19 g salt
200 g sourdough starter

7:30 am: Feed Starter
12:00 pm: Combine water and flour for autolyse
12:45 pm: Sprinkle salt over
1:00 pm: Mix in salt, fold in starter
1:30 pm: 4 sets of stretch & fold
2:00 pm: 4 sets of stretch & fold
2:30 pm: 4 sets of stretch & fold
3:00 pm: Final 4 sets of stretch & fold. Cover for bulk rise
8:30 pm: Divide & preshape
9:00 pm: Final shaping, into bowl and into fridge, covered
7:00 am the next day: Place dutch oven inside oven & preheat to 500f
8:00 am: Take loaves out of fridge, place on parchment paper. Score loaves & place them in dutch oven, covered. Lower oven heat to 450f
8:20 am: Remove lid.
8:40 am: Remove from oven, allow to cool fully before slicing
