This Shepherd's Pie Soup is everything you love about the classic casserole, but in a cozy, creamy bowl. Made with ground beef, mashed potatoes, mixed veggies, plenty of cheese, and a rich seasoned broth, it's the kind of supper that just hits the spot when the weather cools down. There's nothing quite like a big pot of old-fashioned Pennsylvania Dutch chicken corn soup, and it's the perfect way to kick off Soup-tember. In this video, I'm making this comforting classic from scratch with a 6-pound roasting chicken, fresh sweet corn from our garden, homemade chicken broth, celery, and hard boiled eggs. I'll show you how I simmer the chicken for a rich, flavorful broth, skim for clarity, cut corn off the cob, and bring it all together into a hearty, old-fashioned, farm-style meal.
