-2lbs smoked Turkey necks
-32 oz collard greens, trimmed and washed
-1 medium yellow onion, chopped
-2 Tbsp garlic, minced
-4 cups chicken broth or stock
-red pepper flakes to taste
-smoked salt to taste
-splash of white vinegar
-hot sauce (optional)
1: Sauté the onions in a little oil over low/medium until they’re soft.
2: Add in the garlic, and sauté an additional five minutes.
3: Pour in the chicken broth, and add the red pepper flakes, smoked salt, and turkey necks. Cover and let simmer for half an hour.
4: Remove the turkey necks from the pot, and add in the greens. You may have to let them cook down a little to fit them all in the pot.
5: Add a splash of white vinegar, and the turkey necks. Cover and let simmer for one hour.
6: Remove the meat from the necks, chop it up, and add it back to the pot. Give it a stir, and there you go. Serve with cornbread.
The liquid in the pot is called ‘pot likker.’ You can add that into mashed potatoes, cook rice in it, etc.
