I helped rebalance the Challenge Hunt score targets for the fanmade project Super Mario Bros. Remastered's v1.1 update.
To make sure the new score targets were reasonable to hit playing casually, I made sure it was possible to hit the target without hitting the top of the flagpole, with minimal use of the run button, and without collecting especially hidden or out-of-the-way powerups and items (except if knowledge of them is required to get red coins + Yoshi Eggs, since presumably the player would be trying to 100% the mode). I also generally took the path that collects the most red coins possible without doubling back.
