Chef Ryan shares with us how to make kkotgetang, or crab stew. Seasonal Asian blue crabs and vegetables are cooked in a flavorful broth made from dried anchovies, dried kelp and Korean radish. The stew is garnished with chrysanthemum greens for an extra kick of flavor. As the cool breeze fills the air, this comforting dish is sure to warm you up this fall.
[Ingredients]
500g Asian blue crabs
5 Dried anchovies
30g Dried kelp
2T Soybean paste
1T Red chili paste
2t Korean red chili flakes
200g Korean radish
150g Korean zucchini
1 Korean leek
1 Green chili
1 Red chili
5 Garlic cloves
1 Onion
70g Chrysanthemum greens
[Directions]
1. Combine 5 dried anchovies, with heads and guts removed, 30g of dried kelp, 200g of Korean radish cut into semi-circles, and 750ml of water in a pot. Cover, bring to a boil and reduce to medium-low heat for 20 min.
2. Hold the crab and pry off the top shell. Remove the gills, cut the body in half and then cut between the legs. Use kitchen scissors to cut off the tips of the legs.
3. Remove the dried kelp and anchovies from the broth and add 2T of soybean paste, 1T of red chili paste, and 2t of Korean red chili flakes.
4. Add 150g of Korean zucchini cut into semi-circles, 1 chopped Korean leek, 1 julienned onion, and 1 chopped green chili. Add the prepped vegetables and crabs and 5 cloves of minced garlic. Cover, bring to a boil and simmer for 15 min on low heat.
5. Add 70g of chrysanthemum greens and 1 chopped red chili. Cover and cook for another min on low heat.
