So many oddities to cover in Super Mario Sunshine.
Basically these fruits on Pinna Beach dont have a set respawn point due to them being spawned rather than placed objects in the map. When a fruit is placed in the map as an object it has respawn coords set at its initial placement coords, but these spawned fruits arent placed in the map, so their respawn value is set to 0,0,0 as a default value. Since the water height of Pinna Beach is 0,0,0, this makes these fruits impossible to obtain as they spawn in the water which will destroy them immediately...

In this Super Mario Sunshine video, I obtained the shine sprite from the secret course Turbo Track without pressing the A button. This was completed using the turbo nozzle as thats the default nozzle for the course. However, this course is also completable with the hover nozzle and rocket nozzle with 0x A presses, but theres no possible way to enter the course with those nozzles yet without pressing the A button at least once.

When you use a nozzle for the first time in any course, a message box will appear that asks if you would like save the game. This message box normally requires you to press the A button which is an issue I thought was necessary to enter this course, but thanks to commenter, Greg18ist, we now have a way of bypassing that message box! In order to bypass this message, you have to pause the game right before you obtain the nozzle, then highlight the exit course option and press the pause button again. If done correctly, you should end up exiting the course while obtaining the nozzle, bypassing the message all together.

In this video I show off a small glitch I discovered when you attempt to stand on the any of the cannons on the Pinna Beach cannons.
This is caused by a simple collision error where each Bullet Bill launcher is set as a floor, yet the launchers arent thick enough to be a floor. This causes Mario to fall through the cannons and get clipped out of them vertically at the same time, causing this infinite loop of falling and dust particles...")
