SIMPLE SAUSAGE RAGU 🍝
A family meal I made last week that was simple, tasty and a crowd pleaser (well our little crowd anyway). Recipe is below. Hope you enjoy if you make it!
Ingredients:
Sausages - I used a 440g pack of the @tesco Finest Signature Pork Sausages (they’re still on offer actually). Nice thing is that they are chunky sausages which mean there’s less for me to skin! Just use a decent quality sausage though, if you can.
1 onion finely diced
3 cloves of crushed garlic
1tbsp of fennel seeds
A small handful of freshly chopped rosemary
2 tins of good quality tomatoes (I’m a die-hard @muttipomodoro fan)
1 tsp of sugar
Salt and pepper to taste
Heat up a large pan on a moderate heat and add a glug of olive oil. Skin your sausages and break the meat into chunks and fry off until starting to colour. Add in your onion and cook for a few minutes before following up with your garlic and herbs. Cook down until the onion has started to soften and then add in your tinned tomatoes. The trick now is to let this cook down and intensify for about half an hour if you can. Then taste and season with a pinch of sugar and salt and pepper to taste. We served mixed through some rigatoni, topped with freshly grated Parmesan and finely chopped parsley! Enjoy!
