When made in an industrial setting, there are special machines which can extrude batter with a central channel, for filling. We present a more home-made version of the churro, though it is hard to say which is more authentic. As a snack, the churro is a fairly recent invention enabled by the industrial revolution in food preparation. It is made from deep-fried choux paste, and as such is very similar to a cruller. The churro batter is less fatty and generally thicker, and fries up a bit more chewy.
The greater density of the churro batter means that it needs to fry for a bit longer at a lower temperature, so set your fryer to about 330F or so, not all the way up at 350F. Watch the churros as they cook, and get them out once they are golden brown and look delicious. Some turning of the churros may be required, especially if shallow-frying rather than using a deep-fryer with a thermostat. When shallow-frying, try to keep turning to a minimum, probably about 2.5 to 3 minutes per side.
Dust churros with cinnamon sugar immediately after removing them from the fryer to cool on a wire rack. Serve warm churros with dulce de leche, chocolate sauce and/or strawberry sauce, or whatever other sauces appeal to you. Mango or guava might also make lovely sauces for churros.
Makes enough for 4-6 people, roughly 12 short (3”) churros.
Equipment:
• stand mixer or handheld electric mixer highly recommended
• medium to large saucepan, preferably with rounded bottom
• piping bag with open star tip (large format, aperture about an inch across)
• wire rack over pan to catch dripping oil
Ingredients:
1 cup AP flour
1 cup water
1/4 cup butter
1 Tbsp sugar
1⁄4 tsp salt
1 ea egg
1/2 tsp vanilla
1-2 Tbsp cinnamon sugar 3 Tbsp sugar + 1/2 tsp cinnamon
Procedure:
1. Combine water, butter, salt and sugar in the saucepan and bring to a boil, to make choux paste.
2. Once boiling, dump in the flour off-heat and beat with a whisk, returning to medium heat and beating to a smooth paste.
3. Spread out the smooth flour paste in the bottom of the stand-mixer bowl, and let it cool 5 minutes.
4. Add the egg and vanilla to the cool choux paste and beat at a low-to-moderate pace until the choux paste becomes smooth again.
5. Transfer the smooth, enriched choux paste to the piping bag and pipe up to six, 3” long pieces of paste directly into the hot oil. Use clean kitchen scissors to slice off the paste as it emerges from the piping bag.
6. Fry the churros until they are golden brown and look delicious. Be sure to fry them slowly enough to allow their insides to cook fully before the outer crust gets too dark.
7. Remove cooked churros to a wire rack and dust immediately with cinnamon sugar before allowing to cool enough to handle.
8. Serve warm churros with dips/toppings as described above. For true decadence, put two or three churros next to a small scoop of vanilla ice cream, and sauce the whole thing with toppings.
